Here is the thing. Should I use a traditional recipe or try something new? Thai, Russian, Cuban, fusion? I have sesame oil, almonds, ginger, horseradish, dried shrimp, fish sauce, cumin... I seem to be going towards the East and away from the Caribbean. Odd, because the Caribbean is east of New Orleans and New Orleans is considered to be the northern most port of the Caribbean.
